Organic split mung beans or moong beans are used most often in Kitchari, the one pot meal recommended in cleansing and detoxification programs.  Organic split mung beans are known as the "queen of lentils" and are recommended for elderly people and convalescents because they provide energy and strength.  Organic split mung beans are considered to be one of the easiest lentils to digest and they are an excellent source of protein.  They are also very low in fat and provide loads of fiber.  

 

Organic split mung beans have a butter soft consistency and are often used to make soups, stews, salads and dahls.

 

Use organic split mung beans with any of our spices to make a really delicious, nutritious meal.  Organic split mung beans are easy to cook are require little soaking time.

Recipe

Moong dal Soup with Spinach and Spices

 

1 cup yellow moong lentils

6 cups water, chicken or vegetable broth

3 cups baby spinach

2 teaspoons ghee

1 teaspoon mustard seeds

1 tsp cumin seeds

1/4 teaspoon ginger

1/4 teaspoon turmeric

1 teaspoon masala powder

Salt to taste

2 springs finely chopped cilantro

 

Rince and clean the lentils and then soak in 3 1/2 cups water for about 30 minutes.  Drain off the water.

Cook the dal in 6 cups of water (or broth) in medium saucepan and bring to a boil.  Turn down and cook on medium heat for 20-25 minutes, uncovered stirring occasionally.

 

In separate small saute pan, heat the ghee and add asafoetida, mustard seeds, cumin seeds.  When the seeds start to pop and sputter, add the ginger and spinach.  Saute till spinach wilts.

Turn down heat, add garlic and brown slightly.  Then put in the cilantro, turmeric, masala powder.  Stir this into the soup.

Add salt to taste.

 

Season to your taste and add more ghee if desired

 

Sprinkle with a few more springs of fresh chopped cilantro and serve!

Serve with flat bread such as naan or try it with cornbread and raw honey.
